Ingredients
Toasted Vanilla Syrup
1vanilla bean
1cupsugar
1cupwater
Shaken Espresso
3ouncesespressoroom temperature
1ouncetoasted vanilla syrup
½cupice
½cupoat milk
Instructions
Slice the vanilla bean in half length-wise. Then chop it into small pieces.

Add the vanilla bean pieces to a small saucepan and cook on medium-low heat until it is fragrant. Remove the vanilla from the saucepan.

Add the water and sugar to the same saucepan and bring to a boil, stirring occasionally. Once boiling, add the vanilla bean pieces to the mixture and reduce the heat to a simmer. Cook for about 10 minutes, stirring occasionally until the sugar is completely dissolved. Remove from the heat.

Pour the vanilla syrup into a heat-proof mason jar, using a strainer to remove the vanilla bean pieces. Let the syrup cool completely.
Add the prepared espresso, toasted vanilla syrup, and ice to a cocktail shaker. Shake vigorously for about 30 seconds. Pour the mixture, including the ice, into a 16 ounce glass.

Top with oat milk and stir if desired.

Notes
The toasted vanilla syrup recipe makes about 8 servings.If you don't have a cocktail shaker, use a jar with a tight lid.Make sure the espresso is at room temperature so it doesn't melt the ice and so the ice doesn't shock the espresso.You can use double strength coffee or cold brew instead of espresso.
