This strawberry vanilla cake is perfect for spring parties, mother's day, and more. It's super soft and fluffy topped with creamy strawberry frosting.
Cake flour, sugar, baking powder, baking soda, salt, butter, oil, egg, egg white, vanilla, and buttermilk.
Pasteurized egg whites, powdered sugar, vanilla, salt, butter, freeze-dried strawberry powder.
Mix the dry ingredients together on low with a stand mixer with the paddle attachment. Then mix in the butter until it looks like wet sand.
Add the oil, egg, egg white, and vanilla. Then slowly mix in the buttermilk until a batter forms.
Pour into cake pans and bake for 25-30 minutes or until the cakes spring back when lightly touched.
Let the cakes cool completely on a wire rack before you start making the strawberry buttercream frosting.
Whip the egg whites and powdered sugar into a meringue with medium peaks. Then mix in the butter and strawberry powder.
Frost the cake. Start with a thin crumb coat and let the cake chill for 20 minutes. Then apply a thick second layer of frosting.
