Classic soft and chewy homemade peanut butter cookies made with brown butter.
Brown butter makes everything better, and it takes these soft peanut butter cookies to the next level! It enhances their nutty flavor and makes them more tender.
Unsalted butter, granulated sugar, brown sugar, egg, egg yolk, peanut butter, vanilla, flour, baking soda, and salt.
First, melt the butter in a small pot. Let it foam and sizzle. Eventually the milk solids will sink and turn brown. Remove the pot from the heat.
Whisk the cooled browned butter, peanut butter, granulated sugar, and brown together. Then mix in the egg, egg yolk, and vanilla.
Fold in the flour, baking soda, and salt until the streaks of dry flour completely disappear. Chill the dough for at least 30 minutes.
Once the cookie dough has chilled, roll into balls. Roll each ball in sugar and place on a lined baking sheet.
Press a crosshatch pattern into each dough ball with a fork. Bake at 350°F for 9-13 minutes until the edges are set with the middles still puffy.
