These classic peanut butter cookies are made extra delicious with brown butter! It adds a rich nutty flavor and helps them spread in the oven. They're soft, chewy, and a little bit crumbly.
Unsalted butter, granulated sugar, brown sugar, egg, egg yolk, peanut butter, vanilla, flour, baking soda, and salt.
First, brown the butter by melting it in a small pot. Let it foam and sizzle, and eventually the milk solids will brown. Remove from the heat.
Whisk cooled brown butter, peanut butter, and sugars together in a large bowl. Then mix in the egg, egg yolk, and vanilla until well combined.
Fold in the flour, baking soda, and salt until the streaks of dry flour disappear. Chill the cookie dough for at least 30 minutes.
Roll the cookie dough into balls once it firms up. Roll each ball in sugar and place on a lined baking sheet.
Press a crosshatch pattern into each cookie with a fork. Bake at 350°F for 9-13 minutes until the edges are set. The middles should look a bit underdone.
