Olive oil brownies are super soft, fudgy, and loaded with chocolate! Using olive oil instead of butter makes the brownies stay extra gooey and moist for days.
Chocolate, olive oil, sugar, brown sugar, vanilla, eggs, egg white, all purpose flour, cocoa powder, and salt.
Melt 1 cup of chocolate in the microwave, mixing every 15 seconds until completely melted and smooth. Whisk in the olive oil until combined.
Beat eggs, egg white, sugar, brown sugar, and vanilla extract together in a large bowl on medium-high speed until pale or whisk vigorously by hand.
While whisking the eggs and sugar, stream in the melted chocolate and olive oil mixture. Keep whisking until combined.
Fold in the dry ingredients and then fold in the remaining chopped chocolate or chocolate chips.
Pour the brownie batter into a prepared square pan and spread into an even layer. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
