Moist Strawberry Snack Cake

Super moist and tender snack cake with vanilla buttercream, strawberry jam, and fresh strawberries in every bite!

This strawberry snack cake is moist, tender and perfect for Spring! The batter comes together in 1 bowl with strawberries in every bite. It has buttercream frosting and strawberry preserves on top.

Ingredients for the Cake

Flour, sugar, baking powder, salt, butter, eggs, vanilla extract, buttermilk, and diced strawberries.

Ingredients for the Frosting

Softened unsalted butter, powdered sugar, vanilla extract, salt, and strawberry preserves or jam.

In a large mixing bowl, mix the flour, sugar, baking powder, and salt together until evenly combined.

Step 1

Next, mix in the room temperature butter on medium-low speed until the mixture looks like wet sand.

Step 2

Mix in the eggs and vanilla, then stream in the buttermilk. Fold the in the chopped strawberries after that.

Step 3

Pour the cake batter into a square pan and bake for 40-45 minutes. Let cool completely before adding frosting.

Step 4

Make the vanilla buttercream by creaming the butter on medium high speed. Then gradually mix in the powdered sugar on low and add vanilla and salt.

Step 5
