Chocolate Ganache Cheesecake

This chocolate ganache cheesecake is a chocolate lover's dream come true! It's so creamy and rich, truly the embodiment of chocolate decadence. It's made with 4 different types of chocolate.

Ingredients for the Crust

Oreo cookies and melted unsalted butter. Use regular Oreos, not double stuf.

Ingredients for the Cheesecake

Chocolate chips, granulated sugar, sour cream, vanilla extract, cocoa powder, salt, and eggs.

For the Ganache Topping

Bittersweet or dark chocolate, heavy cream, and unsalted butter. Use a chopped chocolate bar or chocolate melting wafers, not chocolate chips.

First, pulse the Oreos and mix the crumbs with melted butter. Press into a springform pan and bake at 350°F for 10 minutes.

Step 1

Melt chocolate chips in the microwave for about 2 minutes, stirring every 30 seconds until it melts completely. Let cool slightly.

Step 2

beat the cream cheese and sugar together with a mixer until smooth. Scrape down the sides of the bowl with a rubber spatula as needed.

Step 3

Add the melted chocolate and beat in the vanilla, cocoa powder, and salt on low speed until creamy. Mix in the eggs one at a time until smooth. Pour over the crust and bake for 1 hour.

Step 4

Let the cheesecake gradually cool overnight. Once it's almost ready, make the ganache by mixing chocolate with heavy cream and adding butter. Chill for 1 hour or until thickened.
