Bittersweet chocolate, oil, granulated sugar, brown sugar, vanilla, eggs, egg white, all purpose flour, cocoa powder, and salt.
Semi sweet chocolate, heavy cream, and unsalted butter. Use a chopped chocolate bar or melting wafers, not chocolate chips.
Melt 1 cup of chocolate in the microwave, mixing every 15 seconds until melted and smooth. Whisk in the oil until combined.
Beat eggs, egg white, sugar, brown sugar, and vanilla together in a large bowl on medium-high speed until pale. Then mix in the oil and chocolate.
Fold the flour, cocoa powder, and salt into the wet ingredients. Pour the brownie batter into a square pan and bake for 25-30 minutes.
To make the ganache, heat heavy cream and pour it over semi-sweet chocolate. Whisk until combined and let cool. It will thicken as it cools.
