Soft and chewy classic peanut butter cookies made with browned butter!
Brown butter makes everything better, and it definitely takes these peanut butter cookies to the next level! It makes them delightfully nutty and tender.
Unsalted butter, granulated sugar, brown sugar, egg, egg yolk, peanut butter, vanilla, flour, baking soda, and salt.
First, melt the butter in a small pot. Let it foam and sizzle. Eventually the milk solids will brown. Take it off the heat.
Whisk the cooled browned butter, peanut butter, and sugars together. Then mix in the egg, egg yolk, and vanilla until well combined.
Fold in the all purpose flour, baking soda, and salt until the streaks of dry flour disappear. Chill for at least 30 minutes.
Once the cookie dough has chilled, roll into balls. Roll each ball in sugar and place on a lined baking sheet.
Press a crosshatch pattern into each dough ball with a fork. Bake at 350°F for 9-13 minutes until the edges are set with the middles still puffy.
