Skinny Strawberry Lemonade Mojito

These skinny strawberry lemonade mojitos are naturally sweetened and made with strawberries, mint, lemon juice, and rum. They're fizzy, slightly sweet, and the perfect, cocktails for sunny days.

Equipment

Ingredients
  

  • 2 strawberries sliced
  • ½ lemon sliced
  • 6 mint leaves
  • 2 oz white rum
  • ½ teaspoon stevia leaf extract
  • 8 oz sparkling water
  • 1 cup crushed ice

Instructions
 

  • Smack the mint in your hands to release the oils. Add the mint, strawberry slices, and lemon wedges to a highball glass.
  • With a muddler, muddle the fruit. Press down on the fruit firmly with the muddler and turn 4-6 times.
  • Pour in the stevia and rum. Stir until well combined.
  • Add crushed ice and top with sparkling water.

Notes

This recipe makes one mojito. Feel free to double or triple the recipe if you're making it for multiple people.
You can use the back of a spoon if you don't have a muddler. If you don't have a jigger, you can use a small measuring cup.
Make sure to thoroughly wash and dry the mint, strawberries, and lemons before using them in this recipe.
If you don't have white rum, you can use gin, tequila, vodka, or gold rum.
Omit the alcohol to make this a mocktail.
Use flavored soda water and extra fruit to add more flavor. Pomegranate seeds, blueberries, and raspberries will make good additions.
