Delicate, buttery cookies filled with tart vegan lemon curd.
You need lemon juice, coconut milk, sugar, vegan butter, lemon zest, and flour to make the lemon curd.
You need flour, vegan butter, coconut sugar, and vanilla extract to make the shortbread cookies.
Make the lemon curd first by mixing all the ingredients together in a saucepan on medium heat. Whisk until the mixture has thickened and then put it in the refrigerator.
Beat the butter until it is smooth. Then, add the sugar and cream until it is light and fluffy. Then, mix in your flour on low until a dough forms.
Once the dough has formed, shape it into a ball and let it chill in the refrigerator for about 30 minutes.
Preheat the oven to 350F. Roll out the chilled cookie dough to about 1/8 inch thick and cut out about 24 cookies. Use a piping tip to cut the middle out of half of them. Then bake!
Let the baked cookies cool completely. Then, pipe about 1 tablespoon of lemon curd into the center of each shortbread cookie with the middle in tact.
