Moist cupcakes studded with juicy apple pieces and spiced with cinnamon and nutmeg.
These spiced apple cupcakes are soft and fluffy with fresh apple pieces in each bite. They have a swirl of cream cheese frosting on top and are perfect for Fall.
All purpose flour, baking powder, cinnamon, ginger, nutmeg, allspice, sugar, brown sugar, salt, butter, oil, egg, egg white, vanilla, buttermilk, apples.
Add flour, baking powder, spices, sugar, brown sugar, and salt to the bowl of a stand mixer. Mix on low about 5 times. Beat in butter until it looks like wet sand.
Next, add the oil, egg, egg white, and vanilla. Make sure the eggs are room temperature. Mix on low until a thick batter forms.
Slowly beat in the room temperature buttermilk until well combined. The batter will be a bit runny and thin.
Fold in the diced apples with a rubber spatula until evenly distributed. I used a combination of Granny Smith and Honeycrisp apples.
Scoop batter in 12 cupcake wells. Bake until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes and transfer to a wire rack.
