This small batch vanilla cupcake recipe yields 6 moist cupcakes! They're super soft thanks to cake flour and are topped with sweet, tangy cream cheese frosting.
Cake flour, granulated sugar, butter, baking powder, sea salt, oil, egg, vanilla, and buttermilk.
Add flour, sugar, baking powder, and salt to the bowl of a stand mixer. Give them a quick mix and then mix in the butter until the texture is like wet sand.
Add the oil, egg, and vanilla extract. Mix on low until a batter begins to form. Slowly pour in the buttermilk and mix until the batter is smooth.
Fill 6 cupcake liners ¾ full with batter. Bake at 350°F/180°C for 18-20 minutes or until the tops bounce back when lightly touched.
Remove the cupcakes from the oven and let them cool for 30-60 minutes. Frost them when they have cooled to room temperature.
