Small Batch Banana Muffins

Soft and fluffy bakery-style muffins made with just one extra ripe banana.

These small batch banana muffins are made with just one ripe banana and have a fluffy texture with a soft, moist crumb similar to banana bread. They're delicious with sky high muffin tops.


Flour, baking powder, cinnamon, salt, butter, oil, sugar, brown sugar, egg, vanilla extract, mashed banana, buttermilk.

Whisk the flour, baking powder, cinnamon, and salt together in a medium bowl for about 10 seconds and set aside.

Step 1

Add the melted butter, oil, sugar, brown sugar, egg, and vanilla to a large mixing bowl and whisk until well combined. Add the mashed banana and buttermilk.

Step 2

Gently fold the dry ingredients into the wet ingredients with a rubber spatula until no dry streaks of flour are left. It's ok if there are some lumps.

Step 3

Portion the batter evenly between 6 muffin liners. Bake at 425°F for 5 minutes and turn the heat down to 400°F and bake for 10-15 more minutes.
