Delicious, fluffy lemon pancakes that are ready to eat in 30 minutes or less.
These simple lemon pancakes are fluffy with a bright, citrusy flavor from lemon juice and lemon zest. They're extra tasty topped with blueberries, strawberries, or whipped cream.
Flour, baking powder, baking soda, salt, granulated sugar, whole milk, vegetable oil, egg, vanilla extract, lemon juice, lemon zest.
Whisk the flour, baking soda, baking powder, and salt together in a large mixing bowl.
In a separate bowl, whisk the sugar, whole milk, vanilla extract, lemon juice, oil, and egg together.
Mix the dry ingredients into the wet ingredients, folding to not overmix the batter. After that, fold in the lemon zest gently.
Pour the pancake batter onto a pan on medium high. Flip when bubbles form on the surface of the pancake (after about 2 minutes).
Let the pancakes cool slightly and top with Greek yogurt, maple syrup, or a dusting of powdered sugar. Enjoy!
