Salted Caramel Cheesecake

A creamy baked cheesecake with a graham cracker crust and homemade salted caramel in the filling and on top.

This baked salted caramel cheesecake is the best sweet and salty dessert! It has a buttery graham cracker crust with homemade caramel in the cheesecake and drizzled on top.

Caramel Ingredients

Granulated sugar, room temperature unsalted butter, heavy whipping cream, vanilla extract, and salt.

Cheesecake Ingredients

Cream cheese, brown sugar, sour cream, heavy cream, vanilla, cornstarch, and eggs.

Melted down sugar in a saucepan until it turns an amber color. Then stir in the room temperature butter until mostly combined.

Step 1

After mixing in the heavy cream, vanilla, and salt, pour the hot caramel into a jar. Let it cool for 30 minutes on the counter, then cool completely in the fridge.

Step 2

For the cheesecake filling, beat cream cheese and brown sugar together. Then mix in sour cream, heavy cream, 1/4 cup caramel, vanilla, cornstarch, and salt. Mix in the eggs.

Step 3

Pour the filling over a graham cracker crust and bake for 70-80 minutes with a water bath. The cheesecake is done when it jiggles slightly in the middle.

Step 4

Let the cheesecake cool for an hour in the switched off oven and an hour on top of the oven. Pour caramel on top and chill overnight in the fridge.
