These peanut butter brownie cookies are so fudgy and decadent! They're essential brownies shaped as cookies with peanut butter stuffed in the center. It's the ultimate flavor combo!
Chopped chocolate, oil, sugar, eggs, egg yolk, vanilla, flour, cocoa powder, salt, chocolate chips, and peanut butter.
First, melt the chopped chocolate in the microwave. Whisk in the oil and let it cool slightly.
In a stand mixer, beat the eggs, egg yolk, and sugar together on high until it lightens in color.
Mix in the melted chocolate and oil mixture. After that, mix in the flour, cocoa powder, and salt on low speed.
Once the dry ingredients are combined, fold in the chocolate chips. You can use any kind of chocolate.
Fill half a cookie scoop with dough and make an indent. Place a teaspoon of frozen peanut butter in the center and cover with more cookie dough.
