These oatmeal chocolate chip cookies are hearty, chewy, and filled with gooey chocolate chips. This is a small batch recipe that makes 6-9 cookies perfect for small households.
Butter, sugar, brown sugar, egg, vanilla extract, oats, all purpose flour, baking soda, cinnamon, salt, chocolate chips.
Whisk the melted butter, sugar, and brown sugar together. Then add in the egg and vanilla extract.
Add oats, flour, baking soda, cinnamon, and salt to the bowl. Fold the dry ingredients in with silicone spatula.
Once the dry ingredients are mostly combined, add the chocolate chips. Fold until you can't see any dry streaks of flour.
Scoop the dough onto a lined baking sheet with 1-2 inches between each other so the cookies have room to spread.
Chill the dough for 20 minutes. After that, bake the cookies at 350°F/180°C for 10-15 minutes.
