Fuffy muffins with streusel that'll remind you of your favorite childhood treat.
These mini cinnamon streusel muffins are so nostalgic! They're the perfect breakfast or snack to take on the go. They're soft and topped with crunchy streusel.
Melted unsalted butter (slightly cooled), all purpose flour, and granulated sugar.
Melted butter, brown sugar, vanilla, egg, flour, baking powder, baking soda, salt, cinnamon, buttermilk..
Make the crumble topping by combining a little flour, sugar, and melted butter with a fork until it looks sandy.
Whisk the melted butter and brown sugar together in a large mixing bowl. Add the vanilla and egg.
Fold the dry ingredients into the wet ingredients until roughly combined. Then fold in the buttermilk until smooth.
Prepare a mini muffin tin with liners and fill each liner 3/4 of the way full. Top with streusel and bake for 11-14 minutes.
