Pumpkin biscotti, or BOO-scotti, are the perfect treats for Halloween. They're super crunchy and adorable decorated as spooky mummies or ghosts.
All purpose flour, pumpkin pie spice, baking powder, salt, butter, granulated sugar, egg, pumpkin puree, and vanilla extract.
Mix the flour, pumpkin pie spices, baking powder, and salt together in a medium mixing bowl and set aside.
Cream the butter and sugar together in a separate large mixing bowl. Then mix in the egg, pumpkin, and vanilla.
Pour the dry ingredients into the wet ingredients. Mix together on low until combined. Chill for 5-10 minutes in the refrigerator.
Wet your hands and form the dough into 2 logs. Bake at 350°F for 25-30 minutes until golden brown and let cool slightly.
Once cool, slice the logs with a serrated knife and arrange the pieces standing up. Bake at 325°F for another 25-30 minutes until golden and dry.
