Gooey, fudgy, and super chocolatey brownie cookies sprinkled with sea salt.
You don't have to decide between a brownie and a cookie when you make these brownie cookies! They're gooey and fudgy like your favorite brownie in cookie form.
Chopped chocolate, oil, eggs, egg yolk, sugar, vanilla, flour, cocoa powder, salt, chocolate chips.
Roughly chop the chocolate and melt it in the microwave. Mix every 15 seconds until it is completely smooth. Then, stir the avocado oil into the chocolate and let it cool slightly.
Add the eggs, egg yolk, vanilla, and granulated sugar to a bowl and beat on high speed for about 3 minutes until the mixture is pale. Then mix in the chocolate and oil.
Mix in the flour, cocoa powder, and salt until just combined Then, fold in the chocolate chips on low or with a rubber spatula.
Use a large cookie scoop to drop the dough onto a baking sheet prepared with parchment paper. The dough will be quite wet.
Bake for 10-12 minutes at 350F until the edges of the cookies seem set. The middles will look slightly underdone but will continue to bake as they cool.
