These fluffy banana muffins are made with just one ripe banana and have a soft texture with a moist crumb like banana bread. They're delicious with sky high muffin tops dusted with coarse sugar.

Ingredients Needed

Flour, baking powder, cinnamon, salt, butter, oil, sugar, brown sugar, egg, vanilla extract, mashed banana, buttermilk.

Whisk the flour, baking powder, cinnamon, and salt together in a medium bowl for about 10 seconds and set aside.

Step 1

Add the melted butter, oil, sugar, brown sugar, egg, and vanilla to a large mixing bowl and whisk until well combined. Add the mashed banana and buttermilk.

Step 2

Gently fold the dry ingredients into the wet ingredients with a rubber spatula until no dry streaks of flour are left. It's ok if there are some lumps.

Step 3

Portion the batter evenly between the muffin liners. Bake at 425°F for 5 minutes and turn the heat down to 400°F and bake for 10-15 more minutes.

Step 4

Once the muffins are done, remove them from the oven and let them cool in their pan for 10 minutes before transferring to a wire cooling rack.
