Pumpkin puree, sour cream, oil, eggs, vanilla, apple cider vinegar, flour, sugar, baking powder, baking soda, pumpkin pie spice, salt.
Start by adding the pumpkin, sour cream, oil, eggs, vanilla, and apple cider vinegar to a large bowl. Whisk until combined.
Add in the flour, sugar, baking powder, baking soda, spices, and salt next. Fold until just combined.
Pour the batter into a prepared loaf pan and smooth out the top with an offset spatula. Bake at 350°F. The bread will take a long time to bake because of the thick batter.
Your quick bread is done when the top is firm and a toothpick inserted in the center comes out clean. Remove from the oven and transfer to a wire rack to cool.
