Fluffy buttermilk muffins with tart dried cranberries (or craisins) in every bite!
Cranberry is the perfect transitional flavor from Fall to Winter. These dried cranberry muffins are soft and fluffy with super tall muffin tops!
Flour, sugar, baking powder salt, melted butter, oil, eggs, vanilla, buttermilk, and dried cranberries.
First preheat the oven to 350°F. Then whisk the flour, sugar, baking powder, and salt together in a mixing bowl.
Mix the melted butter, oil, eggs, vanilla, and buttermilk together in a separate bowl. Make sure the ingredients are room temperature.
Next, pour the dry ingredients into the bowl of wet ingredients. Fold until a few dry streaks of flour remain.
Pour the dried cranberries into the bowl of batter. Fold them in with a rubber spatula until the dry pockets of flour disappear.
Fill muffin liners nearly full with batter. Sprinkle with sugar or more craisins and bake until a toothpick inserted in the center comes out clean.
