Rich coffee cupcakes are made with instant coffee for an intense coffee flavor. They're soft, moist, and have a swirl of coffee cream cheese frosting. They're a coffee lover's dream!
Oil, egg, egg white, buttermilk, vanilla, flour, sugar, baking powder, baking soda, salt, instant coffee, hot water.
Unsalted butter, room temperature cream cheese, powdered sugar, vanilla extract, and instant coffee granules.
Whisk oil, egg, egg white, buttermilk, and vanilla extract together in a large bowl until smooth.
Fold flour, sugar, baking powder, baking soda, and salt into the bowl of wet ingredients gently with a rubber spatula until a few dry streaks of flour remain.
Dissolve the instant coffee in hot water and fold that into the batter. Portion the batter into a cupcake pan and bake for 16-20 minutes.
Next, make the frosting by combining butter, cream cheese, and powdered sugar. Dissolve instant coffee in vanilla and mix that in.
