Coconut Buttercream Frosting

An easy, tropical frosting perfect for Spring and Simmer cakes and cupcakes. Thick, fluffy, and silky smooth with a pipeable consistency.

This coconut buttercream is made with coconut cream and coconut extract for the best coconut flavor. It's delicious on every dessert, like this strawberry coconut cake.

Ingredients Needed

Softened unsalted butter, powdered sugar, coconut cream, vanilla extract, coconut extract, and salt.

First, add the softened butter to the bowl of a stand mixer or electric handheld mixer. Cream starting on low speed and increasing to medium-high speed until smooth.

Step 1

Add half of the powdered sugar and pulse the mixer to incorporate. Then mix it in on low speed. Repeat with the second half of powdered sugar.

Step 2

While mixing on low, stream in the coconut cream. Add in the vanilla, coconut extract, and salt.

Step 3

Continue mixing until thick and fluffy. Increase the speed to medium-high to make an airy buttercream for cupcakes or keep it on low to remove air bubbles.
