These apricot filled thumbprint cookies are a classic Christmas cookie recipe everyone will love. They're super easy to make and are absolutely delicious.
Unsalted butter, granulated sugar, egg yolk, vanilla extract, almond extract, all purpose flour, salt, and apricot jam/preserves.
First, cream room temperature butter and sugar together in a stand mixer on medium-high speed until light and fluffy.
After that, mix in the egg yolk, vanilla extract, and almond extract on medium low speed until well combined.
Gradually mix in the flour and salt on low speed until all of the dry flour patches disappear.
Roll the cookie dough into balls. Roll in sugar if desired and make a "thumbprint" in each by pressing the back of a teaspoon into the center.
Fill each thumbprint with the apricot jam. Bake for 12-14 minutes or until the edges are golden and the centers are bubbly.
