Cocoa powder, hot coffee, vegetable oil, sugar, eggs, sour cream, flour, baking powder, baking soda, and salt.
Whisk the cocoa powder and hot coffee together in a large bowl until smooth. This blooms the cocoa powder for more flavor.
Add the oil, sugar, eggs, and sour cream to the bloomed cocoa powder. Whisk vigorously until combined.
Fold the flour, baking powder, baking soda, and salt into the wet ingredients with a rubber spatula until the streaks of flour disappear.
Pour the cake batter evenly between 3 cake pans. Bake for 30-35 minutes until a a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 5-10 minutes. Then transfer to a wire rack to cool completely.
