Chocolate Lemon Cake

A moist chocolate cake filled with lemon curd with lemon Swiss meringue buttercream.

Chocolate and lemon may seem like an odd combo, but it's delicious in this chocolate lemon cake! The tart lemon curd filling and lemon frosting offset the rich, moist chocolate sponge.

Ingredients for the Cake

Flour, sugar, cocoa powder, baking powder, baking soda, salt, egg, egg white, oil, buttermilk, vanilla, coffee, and lemon curd (for the filling).

Ingredients for the Frosting

Pasteurized egg whites, powdered sugar, unsalted softened butter, fresh lemon juice, and salt.

First, combine the egg, egg white, oil, buttermilk, and vanilla extract. Whisk together vigorously.

Step 1

Add the flour, sugar, cocoa powder, leaveners, and salt to a large bowl. Fold the wet ingredients in with a rubber spatula. Then mix in the coffee.

Step 2

Pour the cake batter into 3 pans and bake for 23-28 minutes. Let cool completely on a wire rack before frosting.

Step 3

Make the Swiss meringue buttercream by whipping egg whites and powdered sugar in a stand mixer. Then add the butter gradually.

Step 4

Once the butter is incorporated, beat in the lemon juice until the frosting is smooth and creamy.
