Moist chocolate cake filled with chocolate covered Rice Krispies for crunch frosted with whipped ganache.
Chocolate crunch cake is inspired by Crunch bars! Soft chocolate cake has a layer of crunchy chocolate Rice Krispies. It's frosted with whipped chocolate ganache frosting- a chocolate lover's dream.
Oil, eggs, buttermilk, vanilla, flour, sugar, cocoa powder, baking soda, baking powder, salt, and hot coffee.
Rice Krispies (or generic puffed rice cereal or puffed quinoa) and semi-sweet chocolate chips.
You only need two ingredients- heavy whipping cream and bittersweet chocolate bars.
Whisk the oil, eggs, buttermilk, and vanilla together in a large bowl. Make sure everything is mixed well.
Dump in the dry ingredients and fold until smooth. Then pour in the hot coffee and mix it in. The batter will be thin.
Pour the batter into two cake pans and bake at 350°F for 25 minutes or so. Let the cool while you make the crunch and ganache.
Mix Rice Krispies and melted chocolate together until the cereal is coated in chocolate. Then chill on a foil lined baking sheet and break into small pieces.
Make the ganache by pouring hot cream over chopped chocolate. Whisk until smooth and chill. Whip with a hand mixer once the ganache has hardened to a pliable texture.
