Olive Oil Cookies

Chewy olive oil sugar cookies that are made without butter and have a unique herbaceous flavor.

These chewy olive oil cookies are a fun, unexpected twist on the classic sugar cookie! They have a bright and fruity flavor from the extra virgin olive oil.


Olive oil, sugar, egg, egg yolk, vanilla, molasses, all purpose flour, baking soda, baking powder, salt.

Whisk the olive oil and sugar together in a large mixing bowl. Then, mix in the vanilla extract, molasses, egg, and egg yolk.

Step 1

In a separate mixing bowl, whisk the flour, baking soda, baking powder, and salt together. Then pour half of the dry ingredients into the wet.

Step 2

Gently fold with a rubber spatula until only a few streaks of flour are left. Pour in the rest of the dry ingredients and fold until no streaks remain.

Step 3

Scoop 6 cookie dough balls onto 2 lined baking trays. Bake for 11-14 minutes or until the edges are slightly golden brown and the middle looks slightly gooey and underdone.
