Soft and chewy molasses cookies with a rich spiced flavor and crackles!
These molasses crinkle cookies are so chewy! They're flavored with ginger, cinnamon, and other warm spices. Rolled in sugar, they have crisp edges and cracks on top. They're perfect for the holidays!
Oil, coconut sugar, molasses, vanilla, egg, all purpose flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
In a large bowl, whisk the oil and coconut sugar together. Then add the molasses, vanilla extract, and egg. Whisk vigorously until well combined.
In a separate bowl, whisk the flour, baking soda, salt, and spices together. Then add half of the dry ingredients to the wet and fold with a rubber spatula. Repeat with the second half.
Cover the bowl with plastic wrap and let it chill in the refrigerator for 30 minutes or until the dough is less sticky. While it's chilling, preheat the oven.
Scoop the dough with a medium cookie scoop and roll each ball in granulated sugar. Place the balls on a lined baking sheet 1-2 inches apart.
Bake at 350F for 11-13 minutes. The edges should be set and the middle will be puffy when they're done. Bang the pan against the counter to encourage crinkles to form.
