These blueberry cheesecake overnight oats taste like dessert for breakfast. They're made with a handful of nutritious ingredients and are easy to meal prep for busy mornings.
Oats, chia seeds, Greek yogurt, cream cheese, maple syrup, vanilla, almond milk, blueberries.
Add the oats, chia seeds, cream cheese, Greek yogurt, maple syrup, almond milk, and vanilla extract to a mixing bowl. Whisk vigorously until smooth.
Once the oat mixture is smooth with no lumps, let it sit on the counter to thicken for 5-10 minutes.
If using frozen blueberries, thaw them in the microwave for about 30 seconds. Mash with a fork until they are fairly smooth, pour out any extra liquid, and set aside.
Spoon the oat mixture into 5 jars and layer the blueberries on top. The oat mixture will be quite liquidy. Refrigerate for at least 4 hours or overnight.
