Biscoff Butter Cookies

Soft and chewy cookie butter cookies with cookie butter and Biscoff cookie pieces folded in the dough and Biscoff spread dolloped on top. No chill time required!

These Biscoff butter cookies are full of cookie butter flavor! They are soft and chewy made with brown butter, Biscoff spread, and crunchy Biscoff cookie pieces.

Ingredients Needed

Unsalted butter, Biscoff spread, sugar, brown sugar, egg, egg yolk, vanilla, flour, baking powder, baking soda, salt, and Bisccoff cookies.

First brown the butter and then mix it with the Biscoff cookie butter in a large mixing bowl until the cookie butter melts.

Step 1

Next whisk in the sugar, brown sugar, egg, egg yolk, and vanilla until the mixture lightens in color.

Step 2

Fold the flour, baking powder, baking soda, and salt into the wet ingredients until just combined with a few dry streaks of flour remaining. Add the crushed Biscoff cookies.

Step 3

Scoop the cookie dough onto the prepared baking sheetst. Then dollop 1 teaspoon of cookie butter on top of each dough ball and bake for 9-11 minutes.

Step 4

Remove from the oven and let cool on the hot cookie sheet for 5-10 minutes. Use a spatula to carefully transfer them to a wire cooling rack.
