Apricot thumbprint cookies are a classic cookie to make for Christmas! They have a simple sugar dough filled with fruity apricot preserves.
Unsalted butter, granulated sugar, egg yolk, vanilla extract, almond extract, all purpose flour, salt, and apricot jam.
First, cream the softened butter and sugar together in a stand mixer on medium-high speed until light and fluffy.
Next, mix in the egg yolk, vanilla extract, and almond extract on medium low speed until well combined.
Gradually mix in the flour and salt on low speed until all of the dry specks of flour disappear.
Roll the dough into cookie dough balls. Roll in sugar if desired and make a "thumbprint" in each by pressing the back of a teaspoon into the center.
Fill each well with jam. Bake the cookies for 12-14 minutes or until the edges are golden and the centers are bubbly.
