These apple spice cupcakes are soft and studded with juicy fresh apple pieces. With tangy cream cheese frosting, they're the perfect dessert for Fall.
Flour, baking powder, cinnamon, ginger, nutmeg, allspice, sugar, brown sugar, salt, butter, oil, egg, egg white, vanilla, buttermilk, chopped apples.
Add flour, baking powder, spices, sugar, brown sugar, and salt to the bowl of a stand mixer. Mix on low about 5 times. Add softened butter and beat until it resembles wet sand.
Next, add in the oil, egg, egg white, and vanilla extract. Make sure the eggs are room temperature. Mix on low until a batter forms.
Slowly beat in the room temperature buttermilk until well combined. The batter will be quite thin and runny.
Fold in the chopped apples with a rubber spatula until evenly distributed. I used honey crisp and Granny Smith apples.
Divide the batter between 12 cupcake wells. Bake until a toothpick inserted in the center comes out clean. Let them cool in the pan for 10 minutes and transfer to a wire rack.
